DaveT’s Dads Italian Meatballs

the formula
1 lb ground beef, or 3/4 lb beef and 1/4 lb pork
2 tablespoons romano cheese, grated
1 small garlic clove, chopped fine
3 slices of stale bread or 1 cup coarse fresh bread crumbs
1 tablespoon chopped parsley
2 eggs
salt and pepper, to season

the procedure

1. Soak bread in water for a few minutes, squeeze out excess
2. Mix bread throughly with all the other ingredients.
3. Shape mixture into round balls, no larger than a small lemon
4. Bake on a non-stick cookie sheet or spray the sheet PAM to prevent sticking.
5. Bake at 350 degrees for 20 minutes.

    I have had great success without baking or frying the meatballs first.

    The meatball recipe I found most successful involves only simmering.

    Sweat chopped onions and garlic for about 10 minutes. Place meatballs (above meatball recipe or your own) on the onions and garlic. Pour one jar or can of your choice sauce over meatballs along with 1/3 cup of water. Simmer for 25 minutes, then stir. Do not stir before then or your meatballs will fall apart.

    This makes the meatballs fabalisimo…melt in your mouth, even!

    Man, my grandmother was Italian and she made the most amazing meatballs I ever tasted, like you wouldnt believe. Sadly, she didnt leave a recipe for me so I’ve been trying to work it out on my own… slowly working my through the meatball recipes here, I still cant figure out what her secret ingredient was though!!!
