The joys of working from home! By far the best thing about working from my home office is lunchtime. I usually eat a good lunch whether in the office or working from home, but last night's leftovers will never compare to a freshly made meal. As always, the inspiration for this particular meal was the contents of my refrigerator. The only thing between you and delicious lunch is a bit of undressed leftover pasta, a few fresh vegetables and some staple pantry items. Even better yet, you're looking at no more than 5 minutes once vegetables are prepped, 15-20 if you do not have any cooked pasta on hand.

Get as creative as you like with this one. No broccoli or asparagus? Replace with zucchini or green beans. Want a little protein? Add some sausage or shrimp. The possibilities are endless! Let us know what you come up with.

Quick Pasta with Broiled Veggies Recipe

Broccoli florets
Asparagus spears, cut into 1 inch pieces
Olive oil
Salt
Pepper
½ tbsp oil (for cooking) - I use coconut oil
1 small shallot or 2 green onions (white parts only), sliced thin
1 garlic clove, minced
¼ tsp red pepper flakes
2 tbsp sun-dried tomatoes (in oil or reconstituted in water), chopped
2 c cooked pasta
Parmesan cheese
Juice of one lemon wedge

  1. Toss broccoli and asparagus in oil, salt and pepper. Cook under broiler for 5 minutes.
  2. While vegetables are cooking, heat oil in pan and saute onions and garlic. Add red pepper flakes.
  3. Add sun-dried tomatoes and cooked pasta and toss until warm.
  4. Add brocolli and asparagus, top with parmesan cheese and lemon juice.
